Responsible for the proper use and maintenance of all galley equipment. To make sure that all repairs are reported immediately in an AVO system.
Ensure that grocery breakage is kept to a minimum in galley and scullery.
Ensure that uniform and personal hygiene policies are followed according company guidelines.
Maintains and oversees the vacation schedule for the department, in close consultation with Hotel Manager.
Keep overtime track of all entitled personnel in his responsible area.

If the company's basic menu cycle requires changes to make sure that, all substituted food items are replaced with seasonal, healthy and well-balanced food items.
Ensure that all menus are sent to the Hotel Manager on a daily basis for proof reading before printing.
Establish proper communication with the Provision Master, Hotel Manager to assure that all items on the menu are available.
Institutes proper flow of communication that allows wait staff and other personnel to know what items are temporarily out of stock and when they are due back on board.
Ensures that all outlets are requisitioning products from stores as needed and in accordance to the controls that are in place.
Supervise requisitions for supplies of CON/DUR in accordance with Hotel Manager and Provision Master.
Responsible for the requisitioning of all liquors and wines for food preparation in galleys.
Responsible that all-perishable food items going through a quality check on the pier before bringing on board. Not accepted items have to be reported to the Provision Master.
Request slow moving item list by the Provision Master twice a month. Chefs du Cuisine should be actively involved in stock turnover.

Have a thorough knowledge of ships daily activities
Responsible for helping to achieve the yearly goal for the bar scores in the guest comment cards
Learn names of the guests in, his/her section
Responsible for cleanliness and the upkeep of his/her own MISC En Place
The Waiter/Waitress will be aware of any special requests and dietary requirements that his/her passengers may require
The Waiter/Waitress will serve his/her passengers to the highest standards set by the company
Perform various duties to include embarkation duties, afternoon teas, and Captains cocktail parties buffet breakfast/lunch service duties, in addition to the normal restaurant duties
Must be flexible with working hours and cleaning duties and any other duties as requested by the Assistant maitre d hotel. Additional duties include collecting hotel stores, wheel chair duties and baggage duties
Attend various training sessions with the aim to further improve his/her level of performance
Attends daily menu briefings in regards of our daily menus
Learn and implement standards of the ship by meeting the relative standards of the restaurant he/she will be assigned to
Strive to minimise breakage and wastage and follows proper procedures when disposing of garbage
Help to set up special events and functions as instructed by the ships management
Communicate any problems, challenges, complaints or service difficulties in a timely manner to the immediate supervisor
Assist with Lido duties on a regular basis
Table silver service in the restaurant to adhere
Follow company guidelines regarding uniforms and personal hygiene
Being able to identify special meal request of specific guests
Responsible for the proper storage/use and maintenance of glassware and china
Assist in additional duties as requested by the ships management

Job requirements and Experience

Preference would be give to a candidate with:

Diploma from a recognised apprenticeship program or equivalent
At least two years of full time working experience on a four or five star (or similar grade) hotel/restaurant, in the addition of catering college, catering to an international clientele
Restaurant experience combined with good attitude, willingness to learn, good presentation and English language skills
Previous Experience from another Cruise Line
Requires the knowledge of all aspects of good quality restaurant service

Skills

Must be self disciplined and be able to communicate with the guests and other departments
Must be a self motivated person with an eye for detail
Should always have the ambition for promotion
Ability to work in a team
Ability to understand and follow verbal and written instructions and see to the completion to the task assigned
Must be a good time keeper

Salary Details

You will receive your monthly salary onboard in cash and this is tax free. Working onboard a cruise line means that no tax will be deducted from your wages and you will not pay National Insurance either. This is your responsibility to report to your local Tax office.
