Job Posting: Chef de Partie - CDP Bread Production & CDP Lamination
Location: Artisan District Food Factory

  • Position Overview: (CDP Bread Production)

As a Chef de Partie specializing in bread production, you will be responsible for executing our bread recipes and ensuring the highest quality standards. You will work closely with the Head Baker to produce a range of artisan breads while maintaining our commitment to excellence.

  • Position Overview: (CDP Lamination)

As a Chef de Partie specializing in lamination, you will be responsible for producing a variety of laminated dough items, including croissants, puff pastries, and danishes. You will work closely with the Head Pastry Chef to ensure consistency and excellence in every batch.

Key Responsibilities: (CDP Bread Production)

  • Prepare and bake a variety of bread types, including sourdough, baguettes, and specialty loaves.
  • Follow recipes and production schedules to ensure timely and consistent output.
  • Monitor the fermentation and proofing processes to achieve optimal results.
  • Maintain cleanliness and organization in the production area, adhering to health and safety regulations.
  • Assist in inventory management, including tracking ingredient usage and ordering supplies as needed.
  • Collaborate with the Head Baker and team to develop new bread recipes and techniques.
  • Train and mentor junior staff, sharing your knowledge and passion for bread making.

Key Responsibilities: (CDP Lamination)

  • Prepare, roll, and shape laminated dough according to recipes and production schedules.
  • Monitor the proofing and baking processes to achieve optimal texture and flavor.
  • Maintain cleanliness and organization in the lamination area, adhering to health and safety standards.
  • Collaborate with the Head Pastry Chef to develop new recipes and innovative laminated products.
  • Assist in inventory management and ordering of necessary ingredients and supplies.
  • Train and mentor junior staff on lamination techniques and best practices.
  • Ensure all products meet the quality standards before reaching customers.

Qualifications:

  • CAN JOIN IMMEDIATELY
  • Proven experience in bread production or a similar role, with a strong understanding of artisanal techniques.
  • Proven experience in pastry or laminated dough production in a professional kitchen.
  • Culinary degree or relevant certification preferred.
  • Knowledge of various bread-making methods, including sourdough and fermentation processes.
  • Strong attention to detail and a commitment to quality.
  • Ability to work efficiently in a fast-paced environment.
  • Team player with excellent communication skills.
